It is an art to make cream puff like a pastry master does. The puffs should be big and crunchy and filled with delicious pastry cream and additional whipped heavy cream. Making such puff cream requires some knowledge. There are certain tricks that make the life of the pastry master a lot easier.

A typical mistake that beginners make when baking their first puff shells is that they do not add all the flour at once to the boiling milk and butter mix. The flour quickly soaks up all the liquid and when more flour is added later, it will directly turn into flour clumps. Therefore, it’s important to add all the flour at once and not little by little.
